One Day Eats n Things in Denver, Colorado
My friend Gigi visits a new city every year for her birthday – which happens to be the same day as my son’s birthday. I’m usually unable to accompany her but this year, I decided to make it happen.
While speeding down a two lane highway, she mentioned that she was thinking about moving to Denver and wanted to look at a few apartments while we were there. I could see the allure of the place – very little traffic, legal weed, and beautiful sights.
The mountains scaled the highway as we danced in the car to Meg the Stallion, Glorilla, and Cardi.
One thing that this trip taught me was how to have a good time with the time you have. We often think that short trips aren’t enough time to have fun, but this trip proved you can get a little taste of a place as long as you’re willing to let curiosity lead the way. With that being said, I’m sharing my favorite things from our 48 hour trip in Colorado.
Rock Amphitheatre
Our first stop was the Red Rock Amphitheatre, a beautiful concert and event venue that sits at the intersection of the Great Plains and the Rocky Mountains. We spent about an hour here literally taking in the sights. Every level had a different view of wonder. To call this place beautiful would be an understatement – it’s truly a phenomenon you have to experience for yourself. In addition to the hiking trails, Red Rock hosts concerts, yoga classes, and movie nights throughout the week.

Our next stop was Pearl Street in Boulder.
We quickly found a parking lot and were extremely impressed by how inexpensive parking was. $2 an hour with a 3 hour minimum beats $20 in Atlanta any day. On our way to find food, we got distracted by a local boho shop and then quickly realized, all of pearl street is filled with boho shops.
Gigi had a really specific lunch wish – she wanted a really good ass tuna sandwich. After 30 minutes of google searches and window menu reading, we stopped inside of a bar taco to collect ourselves. After a few more minutes of google searches, I decided to ask the bartender for a recommendation and within minutes, we were on our way to Lindsay’s Deli.
Lindsay’s Deli
We stood at the Lindsay’s Deli counter perusing the menu, written on a chalk board. Before we could open our mouths to ask any questions, a lady at the register shoved samples into our hands. As we cleaned the sample cups, she gave us her top menu favorites before pausing to hear our thoughts. My immediate impression of Lindsay is that she brought her down south charm and southern hospitality to this town in boulder Colorado.
We ordered Tuna sandwiches and then stumbled over the side options. As we stumbled over the soup options, the lady at the register began handing us samples of chili, chicken noodle and broccoli soup. All were delicious.
I chose chili and coleslaw as my sides – Gigi opted for the chicken noodle soup and a cookie.
As we wait, we talk to the woman at the counter and learn she is from Atlanta. We introduce ourselves and learn that the vivacious woman with southern charm is actually Lindsay – the owner of the shop .
When the food arrived, we already knew we were about to have a good food experience and we weren’t wrong. We were beaming with joy and so grateful we stuck to finding the tuna sandwich Gigi was craving.
Everything from the sandwich to the soup to the sides were delicious. We could each only finish half of the sandwich. When Gigi went up to ask about a to-go plate, we were informed that they will actually wrap our sandwich up for us and send us on our way with a bag.
We both finished our sandwiches that night after a few smoke sessions and I definitely woke up wishing we could go back to Lindsay’s before our flight.
Native Roots Cannabis Co.
After lunch we ventured downstairs to Native Roots Cannabis Co. Prices were reasonable, the budtender was super knowledgeable. We got some pre-rolls and kept it moving. This experience was quick and easy and the prices were reasonable. I loved the sales they were having and how much the budtender knew about the products and effects of each cannabis strain.
We opted for the hotel pool that night, a work out the next morning, and by noon, we were at the airport on our way home.
If you’ve ever visited Colorado, I’d love to know what places stuck out to you. I definitely plan to go back and would love some places to visit when I go!
